Ingredients You’ll Need


150 g flour
100 g cold butter, cut into small pieces
100 g Comte cheese, grated
1 egg yolk
2 tablespoons sesame seeds
1 teaspoon herbs of Provence
1 pinch salt
Pepper to taste


Instructions:


Combine the flour, grated comte cheese, and cold butter in a large bowl. Work the dough with your fingertips until you obtain a sandy texture.
Add the egg yolk, sesame seeds, herbs of Provence, salt and pepper. Mix well to form a homogeneous paste. If the dough is too dry, add cold water, a spoonful at a time, until it holds together well.
Form the dough into a ball, wrap it in cling film, and put it in the refrigerator for 40 minutes.
Preheat oven to 180°C (350°F).
