Introduction to Savory Shortbread
Shortbread isn’t just for dessert anymore. This delightful savory shortbread recipe incorporates the rich flavors of Comte cheese, nutty sesame seeds, and aromatic Herbes de Provence. Ingredients You’ll Need
150 g flour
100 g cold butter, cut into small pieces
100 g Comte cheese, grated
1 egg yolk
2 tablespoons sesame seeds
1 teaspoon herbs of Provence
1 pinch salt
Pepper to taste
Instructions:
Combine the flour, grated comte cheese, and cold butter in a large bowl. Work the dough with your fingertips until you obtain a sandy texture.
Add the egg yolk, sesame seeds, herbs of Provence, salt and pepper. Mix well to form a homogeneous paste. If the dough is too dry, add cold water, a spoonful at a time, until it holds together well.
Form the dough into a ball, wrap it in cling film, and put it in the refrigerator for 40 minutes.
Preheat oven to 180°C (350°F).
Roll out the dough to a thickness of about 4 mm On a work surface must be floured. Use a cookie cutter to cut out shortbread shapes.
Arrange the shortbread on a parchment-lined baking sheet. Sprinkle with more Herbs of Provence and sesame seeds, if desired.
Bake for 12-15 minutes, or until lightly browned around the edges.
Cool on a wire rack before serving.
